The magic started in my Nana’s kitchen when I was just a child, mesmerized by the graceful dance of her crêpe spreader as it swirled across the hot pan. There was something almost hypnotic about watching that thin batter transform into delicate, golden circles. Those moments weren’t just about food—they were about love, tradition, and the simple joy of creating something beautiful with your hands.

Years later, when I became a parent myself, I found myself recreating those same magical moments for my own children. They became my biggest fans, their eyes lighting up just as mine had when I was their age. But I wanted to do more than just recreate memories—I wanted to honor them while making something even better.

Everything changed when I started milling my own ancient grain flour. These weren’t just any grains—these were varieties that had been nourishing people for thousands of years, with complex flavors and superior nutrition that modern wheat had lost. The flour was lighter, more digestible, and created crêpes with an almost ethereal texture that seemed to float on your tongue.

My children could taste the difference immediately. These weren’t just crêpes; they were guilt-free indulgences made with all-natural ingredients, including dairy-free milk that made them lighter and more accessible to everyone. Finally, I had found a way to give my family something as close to pure joy as food could offer, without any of the heaviness or artificial additives that plague so much of what we eat today.

When my husband opened his restaurant, it seemed natural to share my crêpes with a wider audience. I never expected what happened next. Word spread quietly at first—a whisper here, a recommendation there. But soon, people were coming specifically for the crêpes, calling them “the best in LA.”

Then came the flood that devastated the restaurant. In that moment of loss, we discovered something incredible: our reputation had grown beyond anything we imagined. The French community had found us, and their approval meant everything. When French natives—people who grew up with crêpes in their daily lives—declared ours exceptional, we knew we had something truly special.

Suddenly, our guests were more French than American. We had somehow created an authentic taste of France while honoring my Nana’s legacy and my own innovations with ancient grains.

Why “Fleur de Crêpe”? The name came from a moment of inspiration when I realized that food should be a feast for the eyes before it ever touches your lips. I began shaping each crêpe into a delicate flower, carefully folding and arranging them so that when the toppings were added, the entire dish bloomed like a garden on the plate.

Today, Fleur de Crêpe represents the culmination of a journey that began in my Nana’s kitchen and continues with every crêpe we serve. It’s about preserving traditions while embracing innovation, about nourishing bodies and souls, and about creating moments of pure delight in an increasingly complicated world.
